Aged Garlic Is a Process, Not a Marketing Word

Aged garlic extract starts as sliced raw garlic held in aqueous ethanol for more than 10 months, and some batches sit for up to 20 before the extraction is considered finished. The months are the whole point. Fresh garlic is loud because of unstable, oil-soluble sulphur compounds, allicin among them, which form when a clove is crushed and fade quickly after. Time under controlled conditions converts those unstable compounds into stable, water-soluble ones, with S-allyl cysteine as the marker that defines the extract. Aging is chemistry on a schedule, not a slogan. Nothing printed on the front of a bottle does that work. The months do.

What the months do

Crush a clove and you smell the reaction that begins immediately: enzymes convert alliin into allicin, which is partly responsible for the bite and the odour, and which breaks down further within days. The long bath in aqueous ethanol takes those reactive compounds in a different direction. Aqueous ethanol is the medium, controlled conditions are the setting, and patience is the part that does the real work. Over the months, the reactive compounds convert into stable, water-soluble sulphur compounds, and S-allyl cysteine accumulates as the signature of the process. That conversion is why an aged extract and a garlic powder are not the same material with different labels. One is garlic that has been dried. The other is garlic that has been changed, and the change is measurable.

Stability matters more than it first appears. A compound that doesn't hold still gives you a panel that is true the week it was made and drifting ever since. An aged extract is built around a marker that holds still, which is what makes consistent production and honest labelling possible in the first place.

Why S-allyl cysteine is the number to read

Standardisation is what turns a process word into a checkable figure. Aged garlic extract is standardised to S-allyl cysteine, and published trials have run it at 960 mg a day providing 2.4 mg of SAC, over 12 weeks, to study what the ingredient does. SAC is stable, so laboratories can measure it batch after batch. An unstable marker would make standardisation a guess. Those figures matter to you in a specific way: if a bottle does not state a SAC figure on the panel, you cannot know whether its contents resemble the material used in research. Studies are done on ingredients, and the ingredient is defined by its standardisation. The figure is also what lets a trial be repeated elsewhere on the same material and mean something. No figure, no comparison, no reason to expect the same thing from a spoonful of ordinary garlic powder.

What happens to the smell

The sharp odour of fresh garlic comes mostly from volatile sulphur compounds, and the long extraction reduces them, which is why aged extract is far gentler on the nose than a crushed clove. Gentler isn't the same as odourless, and labels that promise zero smell are promising more than the process delivers. What remains is quieter, not absent, and the difference shows up the moment you open a jar. You still get the stable compounds. You just lose the part that made your cutting board famous. If a brand claims odourless aged garlic without showing a process, that's a marketing word doing the work a duration figure should do. Don't grade a bottle on a promise the process never made.

Reading an aged garlic label

A few figures earn their place: the duration of aging in months, the standardised SAC amount per serving, and the serving size in mg that frames both. A label that says aged without a duration, or aged without a SAC figure, is using the word as paint. We print the process because the process is the product. If time and controlled conditions are what create the stable compounds, then the honest label shows the time and names the compound, and you can line both up against the trials. The front of a bottle can say whatever it likes. The panel is where the process shows up. That check takes a minute and saves you a bottle. Your shelf does not need more paint. It needs figures you can check, on this as much as on anything else you buy.

Frequently asked questions

How is aged garlic extract different from garlic powder?Show answerHide answer

It is held under controlled conditions for an extended period, which converts unstable compounds into stable ones.

Does aging remove the smell?Show answerHide answer

It reduces the volatile sulphur compounds responsible for most of it.

What is it standardised to?Show answerHide answer

S-allyl cysteine. That figure is on the panel.
